prochymosin is purified and activated to chymosin by autocatalysis
at pH 2; alpha, recombinantly expressed chymosin has been approved
in at least 17 countries, including Belgium, Chile, Denmark, Finland,
Hungary, Ireland, Israel, New Zealand, Norway, Poland, Portugal,
South Africa, Sweden, Switzerland, the United Kingdom, the United
States and former Yugoslavia (Teuber, 1993); italics, data
